On the weekend I had the pleasure of participating in your Saturday class. I enjoyed the class very much. I have always enjoyed the smoky flavour of meat on the BBQ. Your class has opened my eyes to a new world and appreciation of this low and slow style of cooking. I should have asked questions like that at the class, You gave us a great deal of information and the hand outs are terrific reference. I am planning on experimenting with this style this summer. I am thinking a low and slow smoked roast or pulled pork will be hit around the campsite!
